Ingredients
- 100-130 g pasta of your choice
- 100g basil leaves
- 3 tbsp almonds, roasted
- 7 garlic cloves
- juice of 1/2 lemon, optional
- 3 tbsp extra virgin olive oil
- salt to taste
- 4-5 ice cubes (or splash of cold water)
- 2-3 tbsp fresh cream
Instructions:
- Boil the pasta: Bring a large pot of water to a boil. Add salt and cook the pasta according to packet instructions until al dente. Once the pasta is cooked, drain most of the water, reserving a few tablespoons of pasta water in the pot.

Make the pesto:
1. In a blender, add fresh basil leaves, roasted almonds, garlic cloves, a few ice cubes, lemon juice, extra virgin olive oil, salt and a few ice cubes.
2. Blend till the sauce is smooth and creamy. If you prefer a little texture, pulse it instead for a slightly coarser pesto. - Combine the pasta and the pesto: Add the pesto and a few tablespoons of fresh cream to the pasta. Mix everything together on low heat until the pesto is well combined and coats the pasta evenly.
- Serve: Serve hot with a light drizzle of olive oil on top.
