This no-churn ice cream is genuinely so easy to make. The base uses just whipping cream and condensed milk in a 2:1 ratio and once you have that, the flavour possibilities are literally limitless. I made a classic vanilla ice cream with just 3 ingredients: whipping cream, condensed milk and vanilla extract and believe me when I tell you, it was one of the best vanilla ice creams I’ve ever had. So smooth and creamy, that too without an ice cream maker.
The real fun though is experimenting with flavours:
I made a strawberry crunch ice cream where I mixed in chopped strawberry milky bars, crushed homemade jam cookies and strawberry wafers and then layered it all with homemade strawberry compote. It’s creamy, crunchy and has the perfect balance of sweetness and tart!
The mint chocolate chip oreo ice cream was another favourite. I added peppermint extract, chopped oreos and dark chocolate chips to the base and it turned out so so good. It has that cool, refreshing minty flavour with the perfect crunch from the oreos and chocolate chips. If you love mint chocolate chip ice cream, you definitely need to try this version!

How to make the creamy 2 ingredient base + 3 yum flavours
We start with the 2 ingredient ice cream base. To a bowl, add whipping cream. It should be cold so I recommend chilling both the cream and the mixing bowl beforehand. Using a hand mixer or stand mixer, whip the whipping cream on medium speed for about 3 to 4 minutes or until soft peaks form. Add condensed milk and continue whipping for another 1 to 2 minutes till it thickens slightly. I also like to add vanilla extract at the same time as the condensed milk since vanilla is one of those flavours that works beautifully as a base flavour. It enhances any add on flavours without overpowering them, creating the perfect base for any ice cream flavour!
In the first step, we’ve already made the base and with the vanilla extract, we have a simple but really delicious vanilla ice cream ready! But, if you prefer to keep the base completely neutral, you can skip the vanilla earlier and whip it in now, just before transferring to a container and freezing.
For the strawberry crunch ice cream: chop up some strawberry milky bars, jam biscuits (I used my homemade ones) and strawberry wafers. Fold them into the vanilla base and then layer everything in a jar with strawberry compote (also homemade!). It’s creamy, crunchy and fruity. Honestly, strawberry ice cream has never tasted better and I am truly obsessed!
For the mint chocolate chip oreo ice cream, add peppermint extract to the base along with chopped oreos and dark chocolate chips. The peppermint gives it a cool, refreshing flavour and the mix of oreos and chocolate chips adds that perfect chocolatey crunch.
Once everything is mixed in, transfer the ice cream to a container and freeze it for at least 6 hours or overnight. Enjoyyy!
Shelf Life (How to store)
This ice cream stays good for about 2 weeks in the freezer when stored in an airtight container. Since we’re not adding any extra preservatives, emulsifiers or stabilisers beyond what’s present in the whipping cream and condensed milk, the texture is best within this timeframe!
A few thing to keep in mind
- Stick to the 2:1 ratio to keep the texture smooth, creamy and perfectly sweet (that is not too sweet). For example, if you’re using ½ cup of whipping cream, you’ll need ¼ cup of condensed milk.
- There’s a difference between whipping cream and whipped cream. ½ cup of whipping cream is not the same as ½ cup of whipped cream because whipping cream expands when beaten. Always measure the whipping cream before whipping it.
- You can customise the base however you want: add crushed biscuits, fruit compotes, chocolate chips, nuts or flavoured extracts or syrups!
- If using sweetened whipping cream, reduce the condensed milk since condensed milk is also already sweetened. A 3:1 ratio (3 parts whipping cream and 1 part condensed milk) would be good!

Ice Cream Base
- 2 parts unsweetened whipping cream
- 1 part condensed milk
Classic Vanilla Ice Cream
- 2 ingredient Ice Cream Base
- vanilla extract (1/2 tsp for every cup of whipping cream)
Strawberry Crunch Ice Cream
- 2 ingredient Ice Cream Base
- strawberry milky bar white chocolate, chopped
- strawberry jam biscuits, chopped
- strawberry wafers, chopped
- strawberry compote
Mint Oreo Chocolate Chip Ice Cream
- 2 ingredient Ice Cream Base
- peppermint extract (use 1/4 tsp for every cup of whipping cream)
- oreo biscuits, chopped
- dark chocolate chips
Instructions:
- Pour cold whipping cream into a bowl and whip on medium speed with a hand mixer (or stand mixer) for about 3 to 4 minutes until soft peaks form. The cream should be thick enough to hold its shape but still smooth. If needed, pop the bowl into the fridge or freezer for 5 minutes to keep it cold.
- Add in the condensed milk and continue whipping for another few minutes or till everything is well combined and slightly thicker.
- Fold in any flavour + texture additions of your choice with a spatula!
- Transfer the mixture into a container, smooth the top and cover it tightly. Freeze for at least 6 hours (preferably overnight) or until firm.
