All the cooking happens in one pan, it has a little bit of vodka to bring out the flavours and it’s the kind of meal that feels effortless but tastes like a lot of ♡ went into it.

Things to note when making this recipe
- You can use regular tomatoes instead of cherry tomatoes. If cherry tomatoes aren’t available, use the same amount of regular tomatoes, chopped.
- You can skip cooking the garlic, onion and chilli flakes in oil and directly cook the tomatoes in chilli oil. This works well if you want to simplify the process even more and cut down the cooking time by a few minutes.
- Vodka is optional but highly recommended since it enhances the flavour by bringing out the sweetness of the tomatoes and emulsifies the sauce, making it silkier. The alcohol cooks off so there’s no overpowering taste.
- Ketchup is essentially tomato purée with sugar and vinegar so it adds a slight sweetness and tang and balances the acidity of the tomatoes. If you prefer, you can sugar instead.

Ingredients
- 2 tbsp extra virgin olive oil
- 7 cloves garlic, thinly sliced
- 1 small red onion, thilny sliced
- 1 tbsp red chilli flakes
- 1 shot (2 tbsp) vodka
- 1 + 1/2 cup (200g) cherry tomatoes, cut in halves
- salt, to taste
- 1 tsp oregano, optional
- 1 cup raw pasta, uncooked
- 1 + 1/2 to 2 cups hot water, adjust, should be enough to cover the pasta entirely
- 7 basil leaves, sliced
- 1/4 cup fresh cream
- 1 tsp ketchup (or sugar)
Garnish
- parmesan cheese
- fresh basil leaves
Instructions:
- Heat up a pan and add extra virgin olive oil. Add thinly sliced garlic and onions and cook for about 2 minutes until the garlic turns golden.
- Lower the heat and add chilli flakes and a shot of vodka. Let it cook for a few seconds.
- Cut cherry tomatoes in half and add them to the pan with salt, cooking for about 5 minutes while mashing them with a spatula until they soften and release their juices.
- Add raw pasta and enough hot water to cover the pan. Cover and cook for 8 to 10 minutes, stirring every few minutes to prevent sticking. If the pasta starts to dry out, add more hot water as needed.
- Once the pasta is fully cooked and there’s still some liquid left in the pan, mix in fresh cream, ketchup and fresh basil leaves.
- Serve hot with parmesan cheese and more fresh basil on top, you're going to absolutely love this one!
