Mohabbat means love in Hindi and if there’s a love story in a drink, it’s this one! The floral sweetness of rose syrup melts into the juicy freshness of watermelon, making every sip taste like a perfect match.
This drink has juicy watermelon, coconut jelly and rose infused coconut jelly hearts in a mix of iced milk and rose syrup. Soaked basil seeds add a light and refreshing texture while gond katira provides a natural cooling effect. This desserty drink is floral, fruity and incredibly hydrating.

What you need to make this beautiful hydrating drink
- Watermelon: Fresh, juicy and sweet, watermelon adds a refreshing flavour and bite. I scooped them into cute little balls for a fun touch.
- Coconut Jelly: A fun, bouncy jelly that adds texture to every bite. I made it with fresh sweet coconut water and agar agar, so it has a coconut flavour.
- Rose Coconut Jelly: Rose coconut jelly is just like the coconut jelly but infused with rose syrup for a floral, rosy touch. I set it in heart shaped moulds because well, it’s Mohabbat Ka Sharbat- so it just makes sense and makes the drink extra pretty.
- Gond Katira: With the weather getting warmer, gond katira makes for an incredible addition to this sago. It is a naturally cooling jelly which has a super satisfying, hydrating texture that makes this desserty drink even better.
- Basil Seeds: Soaked basil (sabja) seeds add a unique, slighty chewy texture and make the drink even more hydrating.
- Milk: This is what creates a creamy base.
- Rose Syrup: Instead of condensed milk which I usually use in such drinks, this one gets its sweetness from rose syrup. It doesn’t just add flavour but also brings in that floral aroma and a beautiful rosy hue.
- Ice: Ice is what pulls this all together into that satisfying, chilled drink and makes it super refreshing.

Ingredients
Coconut Jelly
- 1/2 cup coconut water
- 1/2 tbsp sugar
- 1/2 tsp agar agar
Rose Coconut Jelly
- 1/2 cup coconut water
- 1/2 tsp agar agar
- 1-2 tbsp rose syrup
Dessert
- 1 cup watermelon, chopped or scooped
- 1/3 cup coconut jelly
- 1/2 cup rose coconut jelly
- 1/4 cup soaked basil seeds
- 1/2 cup gond katira
- 1/2 cup milk, adjust
- 1/4 cup rose syrup, adjust to taste
- 1 cup ice
Instructions:

We start by making our coconut jelly which takes the longest time.
1. In a saucepan, heat the coconut water over medium heat.
2. Add the agar agar powder and sugar, stirring continuously until fully dissolved.
3. Bring this to a simmer, turn off the heat and then pour into a container.
4. Let it cool at room temperature and then refrigerate covered for a few hours until fully set.
5. Once firm, cut into small cubes. - Rose coconut jelly hearts are the same as coconut jelly but they're sweetened with rose syrup instead of sugar and they're set in a heart mould. You can set them like the former coconut jelly too and cut into cubes once set.
- The gond katira which simply needs to be rinsed under cold and then soaked in water for a few hours (or overnight) until it expands and turns jelly like.
- Similarly, add water to basil seeds and let them swell. This takes around 15-30 minutes.
- I like to scoop my watermelon into tiny little balls for a nice, fun texture but you can chop the watermelon into small cubes too.
- To a large bowl, add: watermelon, coconut jelly, rose coconut jelly, soaked basil seeds, gond katira and lots of ice. Pour in the milk and rose syrup, adjusting to your preferred consistency and sweetness. Mix well and serve cold!
