This is my brown butter chocolate chip skillet cookie: rich, buttery and the kind of dessert you make when you want something quick but deeply satisfying. The brown butter adds a nutty, caramely flavour that gives it so much depth while the condensed milk keeps it sweet, gooey and chewy all at once.
There’s no egg, no sugar, nothing complicated: just 5 simple ingredients that somehow come together into the dreamiest cookie texture. I like using a mix of milk and dark chocolate because the milk chocolate melts into pockets of sweetness while the dark chocolate keeps it balanced and rich. Together, they make every bite just right- not too sweet, not too bitter, just warm, melty perfection straight out of the skillet!

Ingredients
- 1/4 cup (55 g) butter
- 1/4 cup (70 g) condensed milk
- 1 tsp vanilla extract, optional
- 1/2 cup (60 g) all purpose flour
- 1/8 tsp baking soda
- 1/4 cup (60 g) milk and dark chocolate, chopped
Garnish
- flaky salt
- vanilla ice cream
Equipment
Instructions:
- In a pan over low heat, melt the butter and stir frequently for 3-4 minutes until it turns golden brown and starts smelling caramely and nutty. Turn off the heat immediately to prevent burning.
- In a cup or small bowl, add the warm (not hot) brown butter, condensed milk and vanilla and give it a good whisk till smooth and combined.
- In a separate bowl, sift in the flour and baking soda. Add the wet ingredients to the dry ingredients along with the chocolate (chopped dark and milk chocolate or chips) and gently mix with a spoon or spatula until you get a silky, soft dough.
- Grease your skillet generously with butter and add the cookie dough, smoothing it out evenly and top with more chocolate.
-
You don’t need to chill the dough, bake it directly:
• Oven: In a preheated oven at 180°C for 13-15 minutes until the top is golden brown.
• Airfryer: Airfry at 170°C for 11 minutes. - Top with flaky sea salt and serve it warm with vanilla ice cream, enjoyy!
