These are the crunchiest, crispiest onion rings and honestly, controversial opinion but I just think they’re better than fries. They’re so crispy, so crunchy and that’s exactly why this recipe has 3 coatings going on. The flour helps the batter stick, the seasoned wet batter gives you that light, airy crisp and the cornflake–breadcrumb mix adds the extra crunch that makes these unbeatable, the kind you can’t stop reaching for!

Crispy Crunchy Onion Rings

Ingredients
- 3 onions
Coat 1
- 1/4 cup all purpose flour
Coat 2: wet batter
- 1/2 cup all purpose flour
- 1/3 cup cornstarch
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp chilli powder
- salt and pepper to taste
- 1/2 cup soda, adjust
Coat 3: dry crumb
- 1/2 cup panko bread crumbs, pulsed
- 1/2 cup cornflakes, pulsed
- 1 tbsp dried parsley
- salt to taste
Ranch
- 2 tbsp hung curd (or greek yogurt or sour cream)
- 1 tbsp mayonnaise
- 1 tsp garlic, minced
- juice of 1/2 lemon
- 1/2 tbsp dried parsley
- 1 tsp dill, finely chopped
- 1 tbsp milk or water, to adjust consistency
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- salt to taste
Instructions:
- Slice the onions: Peel your onions and slice them into rings based on the thickness you prefer. Separate the rings and set them aside.

Prepare the three coatings:
Dry flour coating: Add some all purpose flour to a bowl.
Wet batter: In another bowl, combine all purpose flour, cornstarch, onion powder, garlic powder, chilli powder, salt and pepper. Pour in soda and mix to form a smooth wet batter.
Crispy coating: Pulse panko breadcrumbs and cornflakes in a blender and mix in salt and dried parsley. - Coat the onion rings: Take each onion ring and dip it into the all purpose flour to dry it out. Move it to the wet batter and coat it well, letting any excess drip off. Finish by coating it in the cornflake–breadcrumb mix and place the coated rings on parchment paper. You can fry them straight away or pop them in the freezer while your oil heats up.
- Deep fry: Heat your oil on medium high. Fry the onion rings for 2 to 3 minutes until they’re crisp and golden. Take them out and drain or paper towel.
- Serve with ranch: Mix hung curd, mayo, oregano, coriander, dill, salt, pepper, onion powder and pressed garlic in a bowl with a whisk or a fork for a quick homemade ranch. Serve immediately with the crispy onion rings!
