Hot Honey Cottage Cheese

Ingredients
- 1½ tbsp honey
- 1 tbsp chilli oil
- ⅓ cup grated mozzarella
- 1 cup fresh cottage cheese (chhena), made from 1 packet (500 m) milk
- salt and pepper, to taste
- fresh coriander, for garnish
Instructions:
- Heat a pan over medium heat, you can use a non stick pan or a stainless steel pan. If using stainless steel, heat it well first, a quick way to check is to sprinkle a few drops of water into the pan. If the water forms little beads and moves around the surface, the pan is ready.
- Add honey and chilli oil to the hot pan and let them heat up for a few seconds. Once the oil is hot and fragrant, add the grated mozzarella and cottage cheese (chhena), spreading them out to form an even layer.
- Let cook undisturbed until the bottom becomes golden, crisp and set while the cheese melts and holds everything together.
- Season lightly with salt and add some fresh coriander on top. Using a spatula, gently fold it over itself, similar to the way a soft omelette is folded, so it forms a wrap like shape.
- Transfer to a plate and finish with more fresh coriander and serve immediately. It works well on its own, on toast, with rice or even as a filling for a sandwich, enjoyy!
