Ingredients
Dough
- 1/3 cup (80 g) warm milk
- 2 tbsp (25 g) sugar
- 1/2 tsp active dry yeast
- 1/2 tsp vanilla extract
- 1 cup (120 g) all purpose flour
- salt to taste
- 1 tbsp tbsp (15 g) butter, softened
Dough Inclusion
- 1/3 - 1/2 cup tutti frutti
More
- butter, to serve with
- hot tea, to serve with
Instructions:
- Proof the yeast: In a bowl, mix sugar, vanilla and warm milk. Add in the active dry yeast, mix and let it sit for 10 minutes for the yeast to bloom and turn frothy.
- Knead your dough: In a bowl, combine all purpose flour and salt. Add the proofed yeast mixture and mix with a chopstick, fork or spatula into a shaggy dough. Add softened butter and mix again. Transfer the dough to a clean surface and knead until it becomes smooth and supple (around 8–10 minutes). Place the dough in a greased bowl, cover lightly with cling film and let it rest in a warm spot for around 1.5-2 hours or until doubled in size.
- Add the tutti frutti: Once the dough has doubled, gently punch it down to release the air. Transfer it to a clean work surface and roll it out into a rough square using a rolling pin. Sprinkle the tutti frutti evenly over the dough. Fold the dough over itself a few times and knead lightly for a minute or two until the tutti frutti is evenly distributed throughout the dough.
- Shape and proof: Divide the dough into 4 equal portions and shape each portion into a smooth ball. Place the dough balls on a tray lined with parchment paper and cover loosely with cling film, letting them proof for another 30–45 minutes or until the buns look light, puffy and slightly bouncy to the touch. Just before baking, brush the tops lightly with a mixture of melted butter and milk.

Bake the buns:
• Oven: 180°C for 25-30 minutes.
• Airfryer: 170°C for 13–15 minutes.
• Kadhai: Preheated on low flame with salt at the bottom for 20–25 minutes. - Serve: Once baked, let the buns cool slightly. Slice them in half, apply copious amounts of butter, close the bun, cut in half again if you like and serve with a hot cup of chai, enjoyy!
