Ingredients
Biscuit Base
- 10 orange cream biscuits
- 1 tbsp (15 g) butter, melted
Orange Posset
- 1 cup (240 g) whipping cream (higher fat)
- 1/4 cup (50 g) sugar
- 3 thin orange peels
- 1/4 cup (60 g) orange juice
Orange Jelly
- 1/2 cup (120 g) orange juice
- 6-8 orange toffees/candies
- 1/2 tsp agar agar
Instructions:
- Take your oranges and slice them in half. Using a spoon or your fingers, gently scoop out the flesh from the centre till you’re left with little orange cups. Transfer the flesh to a bowl and gently mash and squeeze it with your hands till all the juice is released. Strain this mixture to get rid of the pulp and seeds and keep the fresh orange juice aside.
- Take orange cream biscuits and add them to a blender. Pulse till you have a fine powder, add melted butter and mix till the mixture is like the texture of wet sand. Add this biscuit mixture to the bottom of the orange cups and gently press it down.
- For the orange posset, add cream, sugar and a few strips of orange peel to a saucepan and place this on medium low heat. Let this heat up till the mixture is really hot and gently simmering, stirring occasionally so the sugar dissolves completely. Turn off the heat and mix in the freshly squeezed orange juice. Strain the mixture to get rid of the orange peels and pour this into the prepared orange cups. Let these cool slightly, then refrigerate for 2–3 hours or till set.
- For the jelly layer, add orange juice and orange candies to a saucepan and heat till the candies completely melt into the juice. Add agar agar and bring the mixture to a gentle boil while continuously stirring for 1–2 minutes. Turn off the heat and let the mixture cool for a few minutes till it’s still hot but not boiling hot. Carefully pour this over the set posset layer and let it cool to room temperature before refrigerating again till the jelly is fully set.
- Decorate with mint leaves or basil, orange candies, edible flowers or fresh orange zest and serve, enjoyy!
