Pizza Pockets (Airfried!)

Ingredients
Filling
- 1/3 cup sweet corn, boiled
- 2 tbsp black olives, sliced
- 2 tbsp pickled red paprika, chopped
- 2 tbsp pickled jalapeno, chopped
- 3 sundried tomatoes, chopped
- 100g mozzarella cheese, grated
- 100g paneer (cottage cheese), grated
- 1/3 cup pizza sauce (I used storebought but you can use homemade)
- fresh basil leaves, torn
- salt and pepper, to taste

- 13-15 spring roll wrappers
- cornstarch slurry (1/4 cup cornstarch + 1/4 cup water)
- extra virgin olive oil, to brush or spray
Ranch
- 1 tbsp hung curd (or greek yogurt or sour cream)
- 1 tbsp mayonnaise
- 1 tsp garlic, minced
- juice of 1/2 lemon
- 1/2 tbsp coriander, finely chopped
- 1 tsp dill, finely chopped
- 1 tbsp milk or water, to adjust consistency
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- salt, to taste
- 1/4 tsp pepper
Equipment
Instructions:
- For the filling, in a bowl, combine all your favourite pizza toppings. I did chopped red paprika, jalapeños, sundried tomatoes, black olives, boiled sweet corn, grated mozzarella, grated paneer, pizza sauce (I used storebought but you can also use homemade marinara), fresh basil leaves, salt and pepper. Mix everything together until well combined to make the filling.
- Place a thawed spring roll sheet on a clean flat surface and add a scoop of the filling to the bottom centre of the sheet. Brush the edges with cornstarch slurry. Fold the two side corners towards the centre and apply more slurry as needed to help seal them. Fold the bottom edge over the filling and continue rolling upwards to form a pocket, brushing with slurry after each fold to ensure everything stays sealed and the cheese does not leak out while cooking.
- Lightly brush or spray the pizza pockets with olive oil and airfry at 180°C for 15-17 minutes till golden brown and crispy.
- Serve hot with ranch or dip of your choice and enjoyy!
