Ingredients
Chocolate Cake
- 3 Ingredient Chocolate Cake
- 7 biscoff biscuits, chopped
Biscoff Ganache
- 1/2 cup (100 g) white chocolate
- 1½ tbsp (25 g) biscoff spread
- 1/4 cup (60 g) fresh cream
Topping
- biscoff biscuits, roughly crushed
- dot sprinkles
Instructions:
- For the chocolate cake: I used a double batch of my 3 ingredient chocolate cake recipe for this. Once the batter was ready, I folded in some chopped biscoff biscuits and transferred it to a square microwave safe baking dish. Microwave for 5–6 minutes or till a toothpick inserted in the centre comes out clean. Let the cake cool completely.
- For the ganache: In a bowl, combine chopped white chocolate, biscoff spread and cream. Microwave for 1 minute or until everything is warm. Whisk into a smooth ganache with no lumps. Let it cool to room temperature and then refrigerate for atleast 30 minutes. Once chilled, whip using a hand mixer at medium speed till the ganache becomes lighter in colour and fluffy.
- Assembly: Using the bowl or container you plan to serve the dot cake in, gently press it upside down onto the cooled cake and wiggle it slightly to cut out an even layer.
- I used a single thick layer of cake. Place the cake into the container and top with the whipped biscoff ganache. Finish with lots of crushed biscoff biscuits and sprinkles, enjoyy!
