Ingredients
Filling
- 2 tbsp sesame oil
- 7 cloves garlic, sliced
- 1/2 cabbage, sliced
- 1 carrot, sliced
- 1/4 capsicum, sliced
- 7 button mushrooms, chopped
- 1 cup boiled glass noodles or vermicelli, optional
- 2 tbsp soy sauce
- 1/2 tbsp vinegar
- salt and pepper, to taste
- 1/2 tbsp sugar

- 5 spring roll wrappers
- 5 rice paper sheets
- cornstarch slurry (1/4 cup cornstarch + 1/4 cup water)
- extra virgin olive oil, to brush or spray

- sweet chilli sauce

Instructions:
- For the filling, heat up sesame oil or any oil of your choice in a pan. Add minced garlic and cook for a minute until fragrant. Add mushrooms, cabbage, capsicum and carrots. Cook over medium high heat until the vegetables release their moisture and soften slightly.
- Transfer the cooked vegetables to a bowl and add boiled glass noodles or vermicelli. This step is optional but highly recommended as it adds a really nice texture to the filling. Season with soy sauce, vinegar, salt, pepper and sugar. Using scissors, roughly snip the noodles into smaller pieces and mix everything together until well combined.

To assemble the spring rolls, you can use either rice paper sheets or spring roll wrappers.
If using rice paper sheets: Soak them in water for a few seconds until softened. Place some filling near the bottom edge, fold the sides in and roll tightly into a cigar shape.
If using spring roll wrappers: Make a cornstarch slurry by mixing cornstarch with water. Place a wrapper in a diamond shape and add the filling across the lower half. Brush the bottom corner with the slurry and fold it over the filling. Fold the two side corners towards the centre, then continue rolling tightly. Brush more slurry on the top corner to seal the roll completely. - Lightly brush or spray the rolls with olive oil and airfry at 180°C for 17-20 minutes till golden brown and crispy.
- Serve hot with sweet chiili sauce and enjoyy!
