Airfryer Pita Bread

Ingredients
- 1/3 cup warm water
- 1/3 cup warm milk
- 1 tbsp sugar or honey
- 1 tsp active dry yeast
- 1 cup all purpose flour
- 1 cup whole wheat flour
- salt, to taste
- 2 tbsp extra virgin olive oil

Instructions:
- In a small bowl or cup, mix warm milk, warm water, sugar and active dry yeast and let them sit for 10 minutes or till the yeast is foamy.
- In a large mixing bowl, add all purpose flour, salt and whole wheat flour. Pour in the bloomed yeast mixture along with extra virgin olive oil. Mix using a spatula, fork or chopsticks till a shaggy dough forms.
- Knead the dough for 7–11 minutes till it is smooth, soft and not sticky. Lightly grease the dough with olive oil, cover the bowl with cling film or a damp kitchen towel and let it proof in a warm place for 90–120 minutes till doubled in size.
- Divide the dough into 6 equal portions and shape each portion into a smooth ball. Roll each ball into a circle, making sure it is evenly rolled and not too thin. Transfer the rolled pitas to a lightly floured surface or tray. Cover with cling film or a damp kitchen towel and let them proof for another 20 minutes.
- Preheat your airfryer to 200°C for 5–10 minutes. Place 1–2 pitas in the airfryer or as many as fit comfortably without overlapping. Airfry at 200°C for 5 minutes, flipping halfway through after 2½ minutes till puffed and golden.
- As soon as they are cooked, transfer the pitas to a bowl or container with a lid and close it immediately. The trapped steam will keep them soft and pliable, making them perfect for stuffing!
- Serve warm with hummus or use them to make pita pockets filled with falafel, enjoyy!
