Airfryer Corn Ribs

Ingredients
- 3 sweet corn
- 2-3 tbsp olive oil
- 1/2 tbsp red chilli powder
- 1/4 tsp pepper
- 1 tsp onion powder
- 1 tsp parsley, fresh or dried
- salt, to taste
Garnish
- 1 tbsp butter, to brush immediately after baking
- juice of 1/2 lemon
- 2 tbsp parmesan, grated
- fresh or dried parsley
Chilli Lime Dip
- 1/4 cup hung curd or yogurt
- 2 tbsp mayonnaise
- 1 tbsp ketchup
- 1 tsp mustard sauce
- juice of 1/2 lime
- 1 tbsp chilli powder
- 1/2 tsp sugar
- pinch of msg, optional
- pinch of citric acid, optional or add another 1 tsp lime or lemon juice
- salt, to taste
- 1-2 tbsp milk or water, if needed to adjust the consistency
Instructions:
- Remove the husk and as much of the fibres as possible from the sweet corn. Using a sharp knife, divide each cob into half. Carefully cut each half into 4 ribs each, giving you 8 corn ribs per cob.
- Bring salted water to a boil, add the corn ribs and cook for 5–7 minutes or till the corn turns a bright yellow colour. Drain and let cool for a few minutes.
- Add olive oil and seasonings to the corn ribs and toss until evenly coated. I recommend using your hands to make sure every piece is well coated with the oil and spices.
- Arrange the corn ribs in a single layer on a parchment lined airfryer basket. Airfry at 190°C for 13–15 minutes or till golden and crispy.
- As soon as they come out of the airfryer, brush them with melted butter. Finish with a squeeze of fresh lime juice, freshly grated parmesan and fresh or dried parsley.
- To make the chilli lime dip, whisk together hung curd (or thick yogurt), mayonnaise, ketchup, mustard, lime juice, chilli powder, sugar, msg, salt and citric acid (or extra lime juice instead). If needed, add a splash of milk or water and whisk till smooth and creamy.
- Serve the hot corn ribs with the chilli lime dip and enjoyy!
