Ingredients
Marinated Tomatoes
- 2 tomatoes
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- flaky salt, to taste
- 3 garlic cloves, thinly sliced
- fresh basil leaves
Grilled Veggies
- 1/2 eggplant, sliced
- 1/2 zucchini, sliced
- 1 tbsp olive oil
- salt and pepper, to taste
Pesto
- 100g basil leaves
- 2 tbsp pinenuts or walnuts, roasted
- 7 garlic cloves
- juice of 1/2 lemon
- 2 tbsp extra virgin olive oil
- salt to taste
- 4-5 ice cubes (or splash of cold water)
Assemble
- Ciabatta or bread of your choice
- pesto
- 1/2 avocado per sandwich
- pickled red onions
- marinated tomatoes
- grilled veggies
- salt, to taste
Instructions:
- For the marinated tomatoes: Slice the tomatoes and arrange them on a plate. Add basil and very thinly sliced garlic, drizzle with balsamic vinegar and extra virgin olive oil. Season with flaky salt and let the tomatoes marinate in the fridge for atleast 15 minutes so they can soak up all the flavour.
- For the grilled veggies: Take any veggies of your choice. I used zucchini and eggplant and thinly slice them. Heat olive oil in a pan, season with salt and pepper and sear the vegetables on both sides till lightly charred and cooked through.
- For the pesto: In a blender, add fresh basil leaves, roasted pine nuts or walnuts, garlic cloves, extra virgin olive oil, juice of half a lemon, salt and a few ice cubes. Blend till the sauce is smooth and creamy.
- For assembling: Take your bread of choice, I used ciabatta. Slice it in half and toast both sides in a pan with some olive oil till golden brown. On one half, add a very generous layer of pesto, followed by the grilled vegetables, marinated tomatoes and a layer of pickled onions. On the other half, spread the mashed avocado. Close the sandwich, slice it in half and enjoyy!
