5 Minute Coffee Biscuit Cake

A coffee cake made in the microwave in just 5 minutes with store-bought biscuits? If that doesn’t sound like a delicious, time-saving idea, I don’t know what does! Parle-G and Hide & Seek biscuits blend with coffee to create a cake that’s light and fluffy, yet perfectly moist. The rich coffee flavour takes centre stage, with a subtle hint of chocolate peeking through – it’s truly delicious!
How did I get this idea?
I have a series called “you draw, i eat” where I try to recreate my subscribers’s drawings and bring their ideas to life. This cake drawing, along with its recipe (which I modified a bit), was sent to me by Gitika and is her mom’s creation. I love how this series lets me get creative with food and try out so many of your amazing recipes! This heart pizza recreation is one of my favourites.

Ingredients
- 1 pack of Parle-G biscuits, 16 pieces
- 1 pack of Hide & Seek biscuits, 22 pieces
- 1 tbsp instant coffee powder
- 2/3 cup milk, approximately
- 1/3 tsp baking powder
- 1/4 tsp baking soda
- 1/4 cup dark chocolate chips
Garnish:
- Shaved Chocolate

Directions to make this cake
To a blender, add Parle-G biscuits and Hide & Seek biscuits and pulse to blend into a fine powder. Add in a tablespoon of instant coffee powder and a small glass of milk and pulse again to get a smooth and glossy cake batter. Add in the rising agents: pinches of baking powder and baking soda, and fold them into the mixture gently until completely combined.
Grease a baking tin or any microwave-safe bowl generously with butter and transfer the smooth cake batter into it. Always tap the cake tin to get rid of any excess air bubbles and top with lots of dark chocolate chips.
Microwave the biscuit cake for 5 minutes and do the toothpick test. Poke a toothpick into the cake and if it comes out clean, your cake is ready! If the toothpick comes out with batter sticking to it, it’s not done yet and requires more time to bake, so microwave the cake for 1 more minute or until the toothpick comes out clean.
Let the cake cool for 10 minutes in the tin before demoulding it. Shave your favourite chocolate on top, and this delicious coffee cake is ready to be sliced and enjoyed!
Note:
- The rising agents: baking soda and baking powder can be substituted with eno fruit salt.
- You can use your biscuits of choice to make this cake. I made this cheese cake from cheeslings and it’s a sweet and savoury human’s dream come true!
- If you want the cake to be more on the chocolate side, don’t just add the chocolate chips on top but fold them into the batter. You could also add a tablespoon of dark cocoa powder.

Ingredients
- 1 pack of Parle-G biscuits, 16 pieces
- 1 pack of Hide & Seek biscuits, 22 pieces
- 1 tbsp instant coffee powder
- 2/3 cup milk, approximately
- 1/3 tsp baking powder
- 1/4 tsp baking soda

Instructions:
- Take Parle-G biscuits and Hide & Seek biscuits and pulse them in a blender to get a fine powder.
- Add instant coffee and milk and pulse again to get a smooth batter.
- Fold in the rising agents using a spatula and transfer the cake batter to a greased baking tin.
- Top with chocolate chips (refer to note 3 to get a more chocolatey cake).
- Microwave for 5 minutes or till a toothpick comes out clean.
- Cool for 10 minutes before demoulding and topping with some grated chocolate.
- Slice and serve, it’s just so so good!
