I think monsoon is that one season where all these oddly specific cravings hit you out of nowhere. The other day, I suddenly wanted masala corn but not just plain corn in a cup, I wanted something cheesy and also something flaky. So I ended up making these upside down masala corn cheese puffs and they’re basically a mix of all the good things: buttery pastry, a spicy tangy corn filling and lots of cheese.
The best part is, they’re the easiest thing to put together. You make the filling and then layer it straight onto a piece of parchment: a little drizzle of olive oil, a scoop of the corn, some grated cheese and then cover the whole thing with puff pastry. Seal it, poke a few holes, brush the top and bake. That’s literally it. No complicated steps, just a very solid snack that’s perfect for when the weather’s gloomy and you want something comforting instantly!

Upside Down Masala Corn Cheese Puffs

Ingredients
Masala Corn Filling
- 1 cup boiled sweet corn
- 1/2 cup bell peppers, chopped
- 2 tbsp mayonnaise
- 1 tbsp butter, melted
- juice of 1/2 lemon
- 1 tsp chaat masala
- 1 tsp piri piri masala
- salt and pepper to taste
Layer
- 1 tsp olive oil
- 1 scoop masala corn filling per square
- grating of cheese (I used parmesan but any cheese of choice will do)
- 6 puff pastry squares
Brush with
- 1 tbsp milk
- 1 tbsp cream, optional
- 1 tbsp butter, melted
Garnish
- parmesan, grated
- parsley
Instructions:
- Make the masala corn filling: Boil sweet corn for 5 minutes until cooked through. Drain and add to a bowl along with finely chopped bell peppers, mayonnaise, melted butter, lemon juice, chaat masala, piri piri masala, salt and pepper. Mix everything well.
- Assemble: On a piece of parchment paper, add some olive oil. Add a scoop of the masala corn filling in the centre, top with grated cheese and cover with a puff pastry square sheet. Press down gently and seal the edges using a fork.
- Brush with: Brush the top of the pastry with a mixture of melted butter, cream and milk. This helps create a golden, glossy crust while baking.

Bake:
Oven- Preheat the oven to 180°C and bake the puffs for 15–20 minutes till golden brown and crispy.
Airfryer- Preheat the airfryer to 180°C and bake the puffs for 10-13 minutes. Let them cool slightly before flipping. - Garnish and serve: Grate some more cheese on top, sprinkle parsley and serve warm, enjoyy!
