Melt in Mouth Dahi Kebabs

Ingredients
- 200 g paneer, grated
- 1 cup hung curd
- 3 green chilli, chopped
- 1 inch ginger, grated
- handful of fresh coriander, chopped
- salt and pepper, to taste
- 1/4-1/2 cup fine breadcrumbs, in the mixture
- 1 cup fine breadcrumbs + 1/2 tsp dried parsley, to coat

- oil, to deep fry
- roti, optional
- sauces or chutneys of your choice
Instructions:
- In a bowl, combine grated paneer, hung curd, finely chopped green chillies, coriander and ginger. Add salt and pepper to taste and then mix in fine breadcrumbs. Mix everything together until well combined. The mixture should be slightly on the wetter side but still scoopable and easy to handle with your hands. If it feels too loose, add more breadcrumbs.
- Scoop portions of the mixture and shape them into smooth balls. Roll each ball in fine breadcrumbs, coating evenly on all sides.
- Heat oil in a pan on medium heat. Shallow fry or deep fry the dahi kebabs until golden brown on both sides, around 2–3 minutes per side. Turn gently so they don’t break and cook until crisp on the outside.
- Serve hot on their own or place them on top of a roti and gently press to flatten. Add sauces or chutneys of your choice and enjoyy!
