Ingredients
Mushroom filling
- 1 pack (200 g) mushrooms
- 1/4 cup walnuts
- 5 garlic cloves
- 2 red onion, sliced
- salt and pepper, to taste
- 1-2 tbsp extra virgin olive oil
- 1 tbsp soy sauce
- 1 tsp balsamic vinegar
Garlic butter
- 3 tbsp salted butter, melted
- 3 cloves garlic, minced
- 2 tbsp chopped coriander
- 1 tsp chilli flakes
- 1/2 tsp dried or fresh thyme
Green sauce
- 1/4 cup curd or yogurt
- 2 tbsp cream cheese
- handful of fresh coriander
- handful of fresh mint
- juice of 1/2 lemon
- 5 cloves garlic
- salt, to taste
- 1/4 cup ice

Instructions:
- For the mushroom filling: In a baking tray or baking tin, add mushrooms, walnuts, sliced onions and garlic. Season with salt and pepper and drizzle with olive oil and give everything a good mix to make sure everything is well coated.
- Airfry at 180°C for 20–25 minutes, or bake at 190°C for 25–30 minutes, mixing halfway through till the mushrooms and onions are deeply browned and caramelised. Let the mixture cool completely.
- Add the roasted mixture to a blender and pulse a few times to get a coarse mixture. Mix in the soy sauce and balsamic vinegar and your rich, umami packed filling is ready.
- For the garlic butter: Simply mix melted butter with minced garlic, chopped coriander, chilli flakes and thyme.
- Take a tortilla and spread the mushroom filling generously all over it. Roll it tightly from bottom to top to form a log. Using a sharp knife, divide the log into smaller pieces. Thread each piece onto a skewer to make the roll ups, I arranged five roll ups on each skewer but you can add as many as you like.
- Brush the garlic butter generously all over the roll ups and airfry at 180°C for 10–15 minutes till the tortilla is crispy and the tops are golden brown. Brush with some more garlic butter immediately after taking them out of the air fryer.
- For the green sauce: To serve, I wanted a fresh, tangy and savoury sauce to cut through the rich mushroom filling so I made this simple herby cream cheese sauce. Add fresh coriander, fresh mint, yogurt, cream cheese, lemon juice, garlic, salt and ice to a blender and blend till completely smooth.
- Drizzle the green sauce all over the tortilla roll ups and enjoyy!
