Seasoned Fries + Cheesy Dip

Ingredients
- 4 potatoes
Seasoning
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp peri peri masala
- 1 tsp chilli powder
- salt and pepper, to taste
- 1 tsp cheese powder
Cheese Sauce
- 1/2 cup milk
- 1/4 cup cream
- 3-4 slices processed cheese
- 1/4 cup cheddar, grated
- 1 tbsp cheese powder
- 1 tsp cornstarch
- salt and pepper, to taste
Instructions:
- Peel the potatoes and cut them using a regular knife or a crinkle cutter, depending on the shape you prefer. I went with a crinkle cut for extra texture.
- Add the sliced potatoes to a bowl of ice cold water and let them soak for 30 minutes. This step helps remove excess surface starch, which gives you a crispier fries.
- Drain the potatoes well and spread them out on a kitchen towel or paper towel and pat them completely dry.
- Toss the dried potatoes with a light coating of cornflour. This creates a thin outer layer that turns beautifully crisp when fried.
- Heat oil in a pan and fry the potatoes on medium heat, low and slow till they turn golden and crisp.
- Remove the fries and drain them on paper towels. While they’re still hot, transfer them to a bowl and toss with the seasonings. Serve immediately with the cheese dip.
- For the cheesy dip: In a pan, gently heat some cream and milk on low heat. Add a few slices of processed cheese and grated cheddar (optional but recommended for flavour). My secret ingredient: add 1 tablespoon of cheese powder for that classic store bought cheesy flavour. Optionally, mix in some cornflour to help thicken the sauce. Season lightly with salt and pepper.
- Cook on very low heat, mixing continuously until smooth and thickened into a glossy cheese sauce. Do not increase the heat or the mixture may split. Serve the fries with the cooled (or warm) cheese sauce and enjoyy!

These fries were just SO SO GOOD, The crispy fries hot out of oil with an irrestible cheese sauce it was a match made in heaven. (the sauce was so good that I ate it on its own!!!)
