90 sec Single Serve Cookie (in the microwave!)
Soft, gooey, loaded with chocolate and ready in just 90 seconds! This eggless, easy to make chocolate chip cookie is the perfect treat when you’re craving something sweet. You don’t even need an oven!

Ingredients
- 1 tbsp melted butter
- 1 tsp milk
- 1 tbsp powdered brown sugar
- few drops of vanilla
- 3 tbsp all purpose flour
- pinch of baking soda (1/16 tsp)
- 1 tbsp dark chocolate chips
- 1 tbsp dark chocolate chunks
- flaky sea salt (optional topping)
Instructions:
- Combine the wet ingredients: Mix together 1 tbsp melted butter, 1 tsp milk, 1 tbsp powdered brown sugar and a few drops of vanilla in a bowl until smooth. Make sure the sugar is fully dissolved for an even texture.
- Mix in the dry ingredients: Add 3 tbsp all purpose flour and 1/16 tsp baking soda to the wet mixture and combine thoroughly but gently till a soft dough forms. The dough should hold its shape when pressed.
- Fold in the chocolate: Gently fold in 1 tbsp dark chocolate chips and 1 tbsp dark chocolate chunks to distribute them evenly throughout the dough. A combination of both gives a variety in texture!
- Shape the cookie: Unlike my other cookie recipes, this cookie dough gets shaped before its cooked. Transfer the dough onto a piece of parchment paper and shape it into a round cookie. Shaping the cookie beforehand ensures it holds its shape while microwaving as it doesn’t expand much like cookies baked in an oven.
- Freeze briefly: Place the shaped cookie in the freezer for 5 minutes. This step helps the butter in the dough firm up which improves the cookie’s texture while cooking in the microwave.
- Microwave: Microwave the cookie on low power for 90–120 seconds, adjusting the time based on how soft or done you prefer your cookie. I like to microwave it 180 watt for 90-120 seconds. Keep an eye on it during the last few seconds to avoid overcooking.

- Let it cool: Allow the cookie to cool completely before eating. It might look slightly undercooked when it comes out of the microwave but as it cools, it sets into the perfect soft and chewy texture. Finish with a pinch of flaky sea salt and enjoy!
