Single Serve Dot Cake

Ingredients
- 2 tbsp (25 g) white sugar
- 1½ tbsp (23 g) butter
- 1 tbsp (15 g) curd (or yogurt)
- 3 tbsp (45 g) milk
- 1/4 tsp vanilla extract
- 1/3 cup (40 g) all purpose flour
- 1/4 tsp baking powder
- pinch of baking soda
- sprinkles, as much as you'd like
Layer
- funfetti cake
- whipped cream (or frosting of your choice)
- dot sprinkles
Equipment
Instructions:
- In a bowl, add white sugar, milk, curd, vanilla extract and melted butter. Whisk everything together until completely smooth.
- In another bowl, combine all purpose flour, baking soda, baking powder and a pinch of salt. Add the wet mixture along with sprinkles and gently fold everything together with a spatula until fully combined.
- Transfer the batter to a greased baking dish and bake at 180°C for 10-13 minutes or airfry at 170°C for 7-9 minutes until a toothpick inserted in the centre comes out clean.
- Let the cake cool completely before assembling. Using the bowl or container you plan to make the dot cake in, gently press it upside down onto the cake and wiggle slightly to cut out an even cake layer. Repeat once more to get a second layer.
- Place one cake layer into the bowl, spread over a layer of whipped cream or frosting of your choice. Add the second cake layer and repeat with more whipped cream. Finish with lots of dot sprinkles on top.
- I like to refrigerate for 30 minutes before serving so the whipped cream sets slightly and everything stays nice and cold, enjoyy!
