This eggless single serve mango coconut tres leches is so soft, soaked with coconut milk and full of flavour. The cake has coconut milk in the batter and then it’s soaked again in a creamy 3 milk mix of more coconut milk, condensed milk and fresh cream so every bite is tender and rich. There are 2 layers of mango: a layer of mango purée and more fresh mango slices on top along with whipped cream. The natural sweetness of the coconut pairs beautifully with the mango, it’s not overly sweet, just balanced and fresh. The airfried cake makes the process quick it’s soft, fruity and honestly tastes like summer on a beach!

Ingredients
Cake
- 1 tbsp (15 g) thick curd (or yogurt)
- 2 tbsp (30 g) coconut milk
- 1 tbsp (20 g) condensed milk
- 1 tsp (5 g) butter (or ghee or oil)
- 1/8 tsp vanilla extract
- 1/8 tsp coconut essence, optional
- 3 tbsp (25 g) all purpose flour
- 1/4 tsp baking powder
- 1/16 tsp baking soda
- pinch of salt
Milk Soak
- 1/2 - 1 tbsp (10-20 g) condensed milk
- 1 tbsp (15 g) fresh cream
- 3 tbsp (45 g) coconut milk
Top
- 2 tbsp (30 g) mango puree (blended mango)
- 2 tbsp (30 g) whipped cream
- sliced mango
Instructions:
- Make the cake batter: To a bowl, add the wet ingredients- curd, coconut milk, condensed milk, melted butter and vanilla. Mix well and then add the dry ingredients- all purpose flour, baking powder, baking soda and a pinch of salt. Whisk everything into a smooth batter and it into a ramekin, smoothening out the top.

Bake:
Airfryer: Airfry in a preheated airfryer at 165°C for 10-12 minutes or until a toothpick inserted comes out clean.
Oven: If you’re using an oven, bake at 170°C for around 15-18 minutes.
Let it cool completely once baked. - Soak the cake: Once the cake is completely cool, poke holes all over using a fork. In a cup, mix together condensed milk, fresh cream and coconut milk. Pour this soak mixture over the cake and optionally, refrigerate the soaked cake for atleast an hour.
- Finish & garnish: Top the cake with mango purée, whipped cream and some sliced mango. You can chill it a bit more before serving or dig in right away!
