These soy marinated avocados are buttery, umami and SO addictive. They’re cold and refreshing but also deeply savoury with just a hint of sweetness and they melt in your mouth in the best way possible.
The best part? They take only a few minutes to prep. I came across Mayak Avocado: a Korean soy marinated avocado dish on social media and was so intrigued that I had to try it myself and this is my version of it. Just slice an avocado, layer it in a container with tomatoes, onions and fresh lemon slices and then pour over a quick marinade of soy sauce, toasted sesame oil, hot honey, brown sugar and water. Let everything chill for a bit and that’s it. Serve it with rice and you have got yourself a delicious meal that’s simple but so flavourful.
The contrast of flavours is what makes this so so good. It’s salty, sweet, tangy and buttery all at once which makes each and every single bite: perfect.

Things to keep in mind
- If you want an extra kick, feel free to add some sliced chillies or chilli flakes to the marinade.
- You can switch up the flavours in so many ways! Add garlic for extra depth, tofu slices to soak up the marinade and add some protein or experiment with different aromatics like lemongrass and ginger for more texture and flavour. This was my first time making it but I’m already excited to try new variations of this.
- Let it marinate for atleast 30 minutes. A little goes a long way here: you don’t want to leave it in the fridge for too long or the avocado will turn mushy. It just needs enough time to soak up the flavours while staying silky and intact.
- This is best served cold, straight from the fridge.

Ingredients
- 1 avocado, sliced
- 1 tomato, sliced
- 1 spring onion bulb (or small red onion), sliced
- 3 lemon slices
Marinade
- 1/4 cup soy sauce
- 1/4 cup water
- 1 tsp toasted sesame oil
- 1/2 tsp hot honey
- 1/2 tsp brown sugar
- optional add ons: ginger, sesame seeds, garlic, lemon grass, chilli
Serve with
- cooked rice
Instructions:
- Take an avocado, cut it in half, remove it's pit, peel it and slice it into not too thin slices. Place them in a container along with sliced tomatoes, spring onions and lemon slices.
- Make a simple marinade by mixing soy sauce, toasted sesame oil, hot honey, brown sugar and water until well combined.
- Pour the marinade over the avocado and other ingredients in the container.
- Cover and refrigerate for at least 30 minutes (60 min mark is the best time), but don’t leave it too long or the avocado will get mushy.
- Serve cold over rice, spooning extra marinade on top and enjoyy. Super simple, easy and delicious!
