These chilli garlic noodles have a bold, street style taste we all crave and love, just made in a way that’s more wholesome and filling. These noodles are loaded with tofu for protein and plenty of colourful veggies so you get a balanced, satisfying meal. Using whole wheat noodles makes it an even better choice without taking away from the flavour or texture.

15 min Chilli Garlic Noodles

Ingredients
- 100 g uncooked whole wheat noodles
- 2 tbsp olive oil
- 7 cloves garlic, chopped
- 1/2 red onion, sliced
- 1 + 1/2 tbsp chilli flakes
- 150 g tofu, sliced
- 1/3 red bell pepper, sliced
- 1/3 green bell pepper, sliced
- 1 carrot, sliced
- salt and pepper, to taste
- 1/2-1 tbsp schezwan sauce
- 1 tbsp ketchup
- 1 tbsp soy sauce
- 1/2 tbsp brown sugar (or honey)
- 1 tbsp vinegar
Garnish
- chilli oil
- toasted sesame seeds
- green onions
Instructions:
- Boil water and cook whole wheat noodles (or any noodles of your choice) according to package instructions. Drain, rinse with cold water, drizzle a tiny bit of olive oil and set aside.
- Heat olive oil in a pan and sauté onions and garlic till the onions turn golden brown.
- Add in chilli flakes and cook for a minute till fragrant.
- Add in the tofu, mix well and cook until golden on all sides, stirring occasionally.
- Add your vegetables (I used carrots, red bell pepper and green bell pepper but you can use any veggies you like). Season with salt and pepper and cook till the veggies are cooked but still slightly crunchy.
- Add the sauces: schezwan sauce, ketchup, soy sauce, brown sugar and vinegar. Mix well and let this cook for a minute.
- Add in the boiled noodles and toss everything together. Cook for 1–2 minutes until the noodles are well coated and everything comes together.
- Serve hot with a drizzle of chilli oil, sesame seeds and green onions on top, enjoyy!

it was really good! it definitely takes longer than you think and go light-handed on the schezwan sauce cause it will be way too spicy
