This is one of those recipes I make when I want something that feels special but takes barely any time or effort. The mushrooms get cooked down till they’re golden and then everything comes together in one pan: butter, cream, cheese, pasta water, pasta and that’s it .Okay yes, there’s salt and water too but we’re obviously not counting those as ingredients here 🙂
You end up with a creamy, flavourful pasta that feels indulgent without being too rich. You won’t believe how simple and perfect it is for when you want a quick but really satisfying and delicious meal!

Ingredients
- 1¼ cup (100g approx) mushrooms, sliced
- 1 tbsp salted butter
- 1/2 cup fresh (heavy) cream, room temperature
- 1/3 cup salty pasta water (start with this, you can increase to 1/2 cup if needed)
- 1/4 cup white cheddar cheese (or cheese of choice)
- 1 cup cooked pasta (1/3 - 1/2 cup raw pasta)
- 1/2 tsp truffle oil, optional
- salt to taste, if needed
Instructions:
- Boil your pasta in heavily salted water until al dente or as per package instructions. Reserve some of the salty pasta water for the sauce.
- Heat up a pan and add sliced mushrooms. Cook on medium heat on both sides till they soften, release their moisture and begin to brown.
- Add butter and mix well so it glazes the mushrooms evenly. Let it cook for a minute on low heat.
- Pour in fresh cream and mix to combine. Let the sauce simmer gently for a few seconds.
- Add a splash of the reserved pasta water and mix again. Stir in grated cheese and continue mixing until the cheese melts into the sauce.
- Add cooked pasta and a tiny drizzle of truffle oil. Mix everything together until the pasta is well coated and it's ready!
