This is a gluten free, refined sugar free chocolate cake that’s made with oat flour, a touch of ghee for richness and a mix of honey and monk fruit sweetener. The honey adds moisture and keeps the crumb soft while monk fruit is a naturally derived, zero calorie sweetener that’s a great alternative to sugar. The batter is super runny when it goes into the oven and that’s exactly what you want. As the cake bakes, the oats slowly absorb the liquid, giving you that perfectly soft and cakey texture without any hint of graininess.
It’s a one bowl, no fuss recipe that feels indulgent without being heavy. Trust me, no one will be able to guess that this is a healthier version of chocolate cake because it tastes so, so good.

Ingredients
- 1 cup (105 g) oat flour (rolled oats blended into a powder)
- ¼ cup (25g) cocoa powder
- 1½ tsp (6g) baking powder
- ½ tsp (2g) baking soda
- ¼ tsp (1g) instant coffee
- ¼ tsp salt
- ¼ cup (50g) monk fruit sweetener
- ¼ cup (85g) honey
- ⅓ cup (80g) curd (or yogurt)
- ⅔ cup (160g) milk, dairy or plant based also works
- 3 tbsp (40g) ghee
- 1 tsp (5g) vanilla extract
Fold ins
- ¼ cup (45g) chocolate chips (I did a mix of milk and dark)
Equipment
Instructions:
- Make the batter: In a mixing bowl, combine the dry ingredients- oat flour, cocoa powder, instant coffee, baking powder, baking soda and salt. Add in the wet ingredients and sweeteners- ghee, milk, curd, vanilla extract, honey and monk fruit sweetener to the same bowl. Whisk well till you have a smooth, lump free batter.
- Add the chocolate chips: Fold in the chocolate chips if using. These add extra richness and texture to the loaf but you can totally leave them out too if you prefer.
- Transfer and bake: Pour the batter into a greased and parchment lined loaf tin. Smooth out the top, top with more chocolate chips and bake in a preheated oven at 180°C for 45 to 60 minutes or until a toothpick inserted in the centre comes out clean or with just a few moist crumbs.
- Cool and slice: Let the cake cool completely before slicing and enjoyy!
