A classic white sauce pasta is the kind of comforting, indulgent food that just hits the spot on a cosy, rainy day. The sauce is creamy and luscious but not overly rich and it clings to every bite of pasta in just the right way. I like using small cubes of cheese instead of grating it since it melts slower which gives you these little pockets of cheese in the sauce. A touch of honey for sweetness balances the savoury flavours and the garlic bread on the side adds crunch, a satisfying cheese pull and more fun. It’s seriously a classic for a reason, it’s just so, so good!

Ingredients
White Sauce Pasta
- 2 tbsp garlic butter (or 2 tbsp salted butter + 1 tbsp minced garlic)
- 1 ½ tbsp all purpose flour
- 1 ½ cup milk, adjust
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- salt and pepper, to taste
- 1/4 - 1/2 cup salted pasta water, as needed
- 1/2 cup processed cheese (or cheese of your choice), cut into small cubes
- 3 cup cooked pasta (around 1 ½ cup raw pasta boiled in salted water)
- 1/4 cup sweet corn, boiled
- 1/2 tsp honey (or sweetener of choice)
Garlic Bread
- 1/4 cup garlic butter (or salted butter)
- 2 tbsp chopped garlic
- 1 tbsp garlic herb seasoning
- 1 tsp dried or fresh parsley
- 8 slices of bread of choice
- 8 slices of mozzarella (1 per piece of bread)
Instructions:
- Boil the pasta: Boil raw short grain pasta (or any pasta of your choice) in salted water for 7-10 minutes until al dente, reserve some pasta water, drain and set aside.
- Make the white sauce: Heat garlic butter in a pan. Once melted, add flour, mix it in and cook for two minutes. Gradually add milk in batches, stirring continuously to avoid lumps. Let the sauce thicken slightly and then thin it out with a splash of reserved pasta water. Season with salt, pepper, garlic powder and onion powder to taste.
- Add cheese and pasta: Once the sauce is ready, add cubes of cheese and mix until mostly melted. Add the boiled pasta, boiled sweet corn and a small drizzle of honey or sweetener of choice. Mix everything well and adjust consistency with more pasta water if needed.
- Make the garlic butter: In a bowl, mix garlic butter, chopped garlic, dried parsley and garlic herb seasoning.
- Cook the garlic bread: Cut a baguette or any bread of your choice into slices, spread the garlic butter on top, add mozzarella cheese and airfry at 170°C for 7–10 minutes till golden and crispy. Alternatively, you can also toast the bread in a pan or bake in an oven until the cheese is melted.
- Serveee: Serve the hot pasta with crispy cheesy garlic bread on the side and enjoyy!
