Ingredients
Spring Onion Pea Avocado Mash
- 1/2 cup green peas, boiled
- 1 avocado
- 1 onion, chopped
- 1 jalapeno, chopped
- 1 spring onion, chopped
- 1 green chilli, chopped
- juice of 1/2 lemon
- salt to taste
Paneer Filling
- 200g paneer, grated
- salt and pepper to taste
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1 tsp red chilli flakes
- 1 tsp chaat masala
- 1 spring onion, chopped

Instructions:
- Make the pea & spring onion guacamole: Bring a pot of water to a boil and add fresh peas. Cook just until they turn bright green and are soft enough to mash. I don’t like to overboil them, you want them tender but still really sweet. Drain and let them cool slightly.
- Add the peas to a bowl along with the avocado and mash everything well using a fork. You can also do this in a food processor if you prefer a smoother texture.
- Add the chopped onion, spring onion, jalapeño, green chilli, salt and lemon juice. Mix well and adjust seasoning to taste.
- Prepare the paneer filling: In a bowl, add the grated paneer along with onion powder, garlic powder, chilli flakes, salt, pepper, chaat masala and chopped spring onions. Mix everything well till evenly combined.
- Shape and cook the mini parathas: You can use any whole wheat dough for this recipe. I used leftover momo dough but a simple atta dough works perfectly here. Divide the dough into small portions. Flatten one portion slightly, place a spoonful of the paneer filling in the centre and bring the edges together like a dumpling to seal. Dust lightly with flour on both sides and gently roll it out into a small paratha.
- Heat a pan on low to medium heat. Place the paratha on the pan and cook until golden brown on one side, then flip. Apply about 1 teaspoon of ghee and cook until crisp and golden. Flip again, apply ghee on the other side and cook until both sides are evenly cooked and crisp.
- Assemble: Top the hot mini paneer parathas with a generous amount of the pea and spring onion guacamole. Finish with sev if you like and serve immediately, enjoyy!
