Aloo Frankie Smashed Tacos

Ingredients
Aloo Filling
- 3-4 potatoes, boiled
- 2 tbsp ketchup
- 1 tbsp green chilli sauce
- 1 tbsp mayonnaise
- salt and pepper to taste
- 1 tsp red chilli powder
- 1 tsp chaat masala
- 1/2 tsp mango powder
- 1/2 tsp roasted cumin powder
- handful of fresh coriander, chopped
Salad
- 1 tomato, chopped
- 1 red onion, chopped
- 1 tbsp coriander, chopped
- juice of 1/2 lemon
- salt to taste
- 1 tsp chilli powder
- 1/2 tsp chaat masala
More
- grated processed cheese
- green chutney
Instructions:
- Make the rotis: Prepare whole wheat rotis. You can make regular sized rotis or mini rotis like I did. The mini ones are really cute and work perfectly like tacos.
- Prepare the aloo filling: In a bowl, add boiled potatoes and mash them lightly with ketchup, green chilli sauce, mayo, red chilli powder, roasted cumin powder, mango powder, chaat masala, salt and pepper. Add chopped fresh coriander and mix everything well to get a tangy, spicy filling. You want the mixture to be slightly chunky, not completely smooth.
- Assemble the smashed tacos: Take a roti and spread the aloo filling evenly on one side, gently pressing it down so it sticks well to the roti.
- Toast the tacos: Heat a pan and add some butter. Place the roti filling side down and cook until the potato layer develops a nice golden char. Flip and cook the roti side as well until crispy.
- Add cheese: Flip the taco back to the filling side and grate some cheese over it. Cover and let it melt on low heat.
- Make a quick salad: In a bowl, mix chopped tomatoes, chopped onions, green chilli, coriander, salt, chaat masala and lots of lemon juice.
- Assemble and serve: Top the cheesy smashed taco with the tomato onion salad and some green chutney. Fold and serve hot.
