Bhutanese Ema Datshi Paneer

Ingredients
- 1 tbsp butter
- 200g paneer, chopped
- 11 garlic cloves
- 7 green chillies
- 7 bullet chillies
- 3 chilli bajji
- water, as needed
- salt and pepper, to taste
- 1/2 tsp onion powder
- 3 cheese slices (or grated)
Instructions:
- Heat butter in a pan over medium heat. Add chopped paneer and cook until golden brown on all sides. Remove the paneer from the pan and set aside.
- For the chillies, I used a mix of bullet chillies, regular green chillies and chilli bajji. Slice the chillies lengthwise into long strips.
- Add all the sliced chillies to the same pan along with whole garlic cloves. Pour in enough water to just cover the chillies, cover the pan with a lid and let this simmer for 10 to 15 minutes until the chillies have softened.
- Turn off the heat and add the paneer back to the pan. Season with salt, pepper and onion powder if using, place cheese slices on top of the paneer, cover with a lid and let the cheese melt completely.
- Once the cheese has melted, gently mix everything with a spatula till the paneer and chillies are coated in a creamy gravy.
- Serve hot with rice, tingmo or both and enjoyy!
