Corn Cheese Sandwich

Ingredients
Corn Filling
- 1 onion, chopped
- 1/2 cup sweet corn, boiled
- 2 tbsp capsicum, chopped
- 2 tbsp red bell pepper, chopped
- 1-2 tbsp mayonnaise
- 1/4 cup mozzarella, grated
- 2 cube processed cheese, grated
- salt and pepper to taste
- 1 tsp red chilli flakes
- 1 tsp oregano
- 1/2 tsp dried parsley
- 1/2 tsp chaat masala
Assemble
- 6 slices of bread
- 1 tbsp green chutney per sandwich
- sweet corn filling
- butter to toast
Instructions:
- In a bowl, add boiled sweet corn, finely chopped onion and chopped red and green bell peppers.
- Add lots of grated mozzarella and processed cheese, followed by a spoonful of mayonnaise.
- Season with salt, black pepper, oregano, chilli flakes, dried parsley and chaat masala.
- Mix everything really well until you have a creamy filling.
- Take two slices of bread and spread green chutney on one slice.
- Top generously with the corn and cheese filling and close with the other slice of bread.
- Toast the sandwich in butter on a pan until golden brown and crisp on both sides.
- Slice in half and enjoyy!
