This double mango matar salad with a lemon ginger dressing is an easy salad that hits every “chaat” note. It’s sweet, spicy, tangy and so fresh.
We have boiled white peas for protein and complex carbs, roasted peanuts and sunflower seeds for healthy fats and crunch, raw mangoes to bring in the sharp tang, ripe mango balances it with sweetness and cucumber keeps it cool and hydrating. The dressing pulls it all together with the lemon adding zing, the ginger some heat and there’s a hint of olive oil, honey, chaat masala and kala namak to bring it all together. It’s simple, bold and very satisfying!

Double Mango Matar Salad (Chaat)

Ingredients
Chaat
- 1 onion, chopped
- 1/2 raw mango, chopped
- 1 ripe mango, chopped
- 1 cucumber, chopped
- 1 + 1/2 cup white peas (matar), boiled
- 1/4 cup roasted peanuts
- 1/4 cup roasted sunflower seeds
- fresh coriander leaves
- 1/2 cup millet vampoosa (or any crunchy snack of choice), optional
Dressing
- 1 inch ginger
- 1-2 green chilli
- juice of 2 lemon
- 2 tbsp extra virgin olive oil
- 1/2 tbsp honey
- chaat masala, to taste
- salt and pepper , to taste
- 1/2 tsp kala namak
Instructions:
- We start by prepping all the ingredients. Finely chop the onion, cucumber and raw mango. Chop the ripe mango into slightly bigger chunks and add everything to a large bowl along with boiled white peas, roasted peanuts, sunflower seeds and fresh coriander.
- For the dressing, add ginger, juice of two lemons, extra virgin olive oil, honey, chaat masala, kala namak, salt and pepper to a blender and blend till smooth.
- Pour the dressing over the salad along with some crunchy vampoosa (or any snack for crunch), mix well and serve cold!
