Eggless Creme Brulee

Ingredients
- 1 cup (240 g) full fat milk
- 3/4 cup (180 g) cream
- 1 tsp vanilla extract, optional
- 1/4 cup (50 g) sugar
- 3 tbsp (30 g) vanilla custard powder (or any flavour of your choice) + 1/4 cup room temperature milk
Sugar Shell
- 1 tbsp granulated sugar per ramekin
Instructions:
- In a pot, heat milk and cream on medium heat till hot but not boiling. Add the sugar and vanilla extract, mix well and let it cook till the sugar has completely dissolved.
- In a separate cup, mix the vanilla custard powder or cornstarch with some room temperature milk. Give it a really good mix so there are no lumps.
- Pour this mixture into the hot milk and cream mixture. Cook on medium heat, whisking continuously till it thickens into a smooth pudding like consistency.
- Transfer the custard into ramekins and let it cool to room temperature. Once cooled, refrigerate and let it set till the custard is firm but still jiggly.
- Take the ramekins out of the fridge and top each one with a generous, even layer of sugar. Torch the sugar using a blowtorch. If you don’t have one, carefully heat the back of a spoon over direct flame and press it on the sugar to caramelise it.
- Let the sugar set for a minute, crack into the caramelised top with a spoon and enjoy that perfectly satisfying sugar shell!
