Ingredients
- 4-5 red carrots, grated
- 3 tbsp ghee
- 2 cups whole full cream milk
- 3 cardamom pods, crushed
- 1/4-1/3 cup sugar, adjust to desired sweetness
- 1/2 cup mava (khoya), crumbled
Dry Fruits
- 1 tbsp ghee
- 3 tbsp almonds, chopped
- 3 tbsp cashews, chopped
- 3 tbsp pistachios, chopped (for garnish)
Instructions:
- Peel and finely grate the red carrots. This step is a bit tiring but absolutely worth the effort. Finely grated carrots cook evenly and give the halwa the right texture.
- Heat a deep pan or kadhai on medium low heat. Add the ghee and let it melt completely. Add the grated carrots and cook them, stirring continuously until they soften, brighten in colour and most of the raw smell disappears. This step is important as you want the carrots to cook properly before adding the milk.
- Once the carrots are cooked, add the milk in batches, mixing well each time and letting it get fully absorbed by the carrots before adding more. With the first batch of milk, add the crushed cardamom pods. Continue cooking and adding the milk gradually until all of it has been absorbed.
- At this stage, most of the hard work is done. Add the sugar and mix well. Cook until the sugar dissolves completely. The halwa will loosen slightly once the sugar is added which is exactly what you want.
- Chop the cashews and almonds finely. Heat a small pan with a little ghee and roast the nuts until fragrant. Add the roasted nuts to the halwa along with the mawa (khoya/milk solids). Mix well and let it cook for a few more minutes so everything comes together beautifully.
- Finish with more chopped nuts on top, I also used pistachios for garnish. Serve warm and enjoyy!
