Lemon Asparagus Broccoli Pasta

Ingredients
- 120 g dry spaghetti
- 3 tbsp extra virgin olive oil
- 7 cloves garlic, sliced
- 2 stalks asparagus, chopped
- 1/4 broccoli, chopped
- 1 tsp red chilli flakes
- salt and pepper to taste
- 2 tbsp vodka, optional
- juice of 1/2 lemon
- 1/4 cup pasta water, adjust
- a generous grating of parmesan
Instructions:
- Bring a large pot of water to a boil. Salt it generously and cook the spaghetti until al dente according to the package instructions. Reserve some pasta water before draining.
- Heat a pan over medium heat. Add a generous amount of olive oil and let it heat up.
- Add the sliced garlic and cook until lightly golden and fragrant.
- Add the chopped asparagus and broccoli. Mix well and cook until both turn bright green and are just tender.
- Season with salt, pepper and chilli flakes. Deglaze the pan with a splash of vodka and a little reserved pasta water, scraping up anything stuck to the bottom.
- Add the cooked spaghetti to the pan along with lemon juice. Toss everything together until well combined.
- Turn off the heat and add a generous grating of parmesan. Mix well until the sauce emulsifies and coats the pasta and serve hot!
