Mangalore’s Goli Baje

Ingredients
- 3/4 cup all purpose flour
- 1/4 cup rice flour
- 3 green chilli, chopped
- 1 inch ginger, grated
- 2 sprig curry leaves, chopped
- 1/4 cup coriander, chopped
- 1/4 cup freshly grated coconut
- salt to taste
- 1/2 cup curd (or yogurt)
- splash of water
- 1/2 tsp baking soda, optional
Instructions:
- In a bowl, add all purpose flour, rice flour, chopped curry leaves, coriander, green chillies, ginger, grated coconut, curd and a splash of water. Mix everything well until you get a thick batter.
- At this stage, you have two options. You can either let the batter ferment in a warm space for a few hours till it develops a slightly sour smell or mix in a pinch of baking soda and set it aside for about an hour.
- Heat oil in a deep pan over medium heat. To check if the oil is ready, drop a spoon of batter into the oil, if it sinks briefly and then floats up without sticking to the bottom, the oil is hot enough.
- Carefully spoon in portions of the batter and fry. Cook for about 2–3 minutes on each side, flipping gently, until the goli bhaje are evenly golden brown and crisp on the outside.
- Serve hot with green chutney and coconut chutney, enjoyy!
