Ingredients
No Bread Wrap
- 2 small or 1 regular sweet potato, thinly sliced
- salt to taste
- 2 tbsp cheese of choice ( i used cheddar), grated
Fillings
- 1/2 avocado, smashed
- 1 tbsp tandoori mayonnaise
- 1 vegetable pattly
- tomato slices
- gherkin slices
- red onion slices
- 1 tbsp mustard sauce
Instructions:
- We start with the sweet potatoes. Peel only the parts that don’t look great and then wash them really well. Slice them super thin using a mandolin or a sharp knife.
- Transfer the sliced sweet potatoes to a bowl of cold water and rinse them once or twice. This helps remove excess starch and any remaining impurities. Drain well and pat them dry.
- Line your air fryer basket or baking tray with parchment paper. Arrange the sweet potato slices slightly overlapping, like a ratatouille-style pattern, forming a neat rectangle or square. Make sure there are no big gaps.
- Season lightly with salt and any spices you like. Sprinkle a layer of grated cheese on top. This acts as the binding and helps the sweet potatoes turn into one solid wrap. I used cheddar but parmesan or mozzarella work just as well.
- Airfry at 180°C for 13–15 minutes or bake at 180°C for 20-25 minutes until the bottom turns crisp and the cheese melts. I like to add cheese in two stages. Airfry once, then at around the 7 minute mark, take it out, add a little more cheese on top and put it back in. This gives you a crisp cheesy base with extra melty cheese on top.
- Once done, let it cool slightly and carefully flip it over. This is your wrap base.
- Assemble the filling. I went for a burger style wrap. Spread mashed avocado on one half and tandoori mayo on the other. Place an airfried vegetable patty on the avocado side. Add sliced onion and tomato on the mayo side and then top the patty with sliced gherkins or pickles and mustard sauce.
- Fold the edges over to close it like a sandwich or wrap, press gently, slice if needed and enjoy while it’s warm!
