These sheet pan loaded nachos come together with the perfect mix of textures and flavours and everything is genuinely so easy to make. The base is jalapeño nachos that stay crisp even after baking, topped with a spiced tomato tofu that’s savoury, smoky and full of flavour. The guacamole adds creaminess and freshness, the sweet corn brings a little pop and the cheddar melts into all the gaps so every bite feels loaded. Once it comes out of the oven, the fresh tomatoes and onions add that crunchy bite, the sour cream and salsa balance all the heat and the crushed doritos on top give the perfect finishing crunch. It’s all made with simple steps, minimal prep and everything bakes on one tray which makes this the easiest, most satisfying nacho situation you can pull together at home.

Ingredients
Spiced Tofu
- 200g tofu, grated
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp cumin powder
- 1 tsp chilli powder
- salt and pepper to taste
- 2 tbsp olive oil
- 1/2 cup tomato puree
Guacamole
- 1 avocado, mashed
- juice of 1/2 lemon
- 1 green chilli, chopped
- salt to taste
Layer
- jalapeno nachos
- spiced tofu
- cheddar cheese
- sweet corn
- jalapeños
- tomatoes
- onions
- sour cream (or greek yogurt)
- salsa
- guacamole
- dinamita doritos
Instructions:
- Make the crispy tofu: Grate your tofu and spread it on a parchment lined tray. Add half the seasonings and a drizzle of olive oil. Mix well and bake at 200°C for 10–15 minutes until crispy.
- Make the spiced tomato sauce: In a pan, heat tomato purée with the remaining seasonings. Cook until the sauce reduces and thickens, adjust with a splash of water only if needed. Turn off the heat, add the crispy tofu and mix well. Your spiced tofu is ready.
- Make the guacamole: In a bowl, add one avocado, chopped green chilli, salt to taste and lemon juice. Mash with a fork and mix to combine.
- Assemble the nachos: On a parchment lined baking tray, add jalapeño nachos as the base. Top with the spiced tofu, chopped cheddar cheese, boiled sweet corn and pickled jalapeños. Bake at 180°C for 7–10 minutes until the cheese melts.
- Finish and serve: Top with chopped tomatoes, onions, dollops of sour cream, salsa, guacamole and crushed doritos, enjoyy!
