Viral Brownie Pudding (eggless!)

Ingredients
- 1/2 cup (100 g) butter
- 1/2 cup (70 g) icing or powdered sugar
- 1/2 cup (50 g) cocoa powder
- 1/4 cup (60 g) condensed milk
- 1/3 cup (80 g) milk
- 1/2 tbsp vanilla extract
- 1/3 cup (40 g) all purpose flour
- 1/2 tbsp (4 g) cornstarch
- 1/16 tsp baking soda
Topping
- 1 slab dark chocolate, optional
- flaky salt
Instructions:
- Brown the butter: In a pot over low heat, melt the butter and stir frequently for 3-4 minutes until it turns golden brown and starts smelling caramely and nutty. Turn off the heat immediately to prevent burning.
- Bloom the cocoa in the brown butter: While the brown butter is still warm, add the cocoa powder directly to it. Mix well until smooth. Mixing cocoa with warm butter helps bloom it which gives a deeper, richer chocolate flavour.
- Whisk with sugar: Once the mixture has cooled a bit (it should be warm, not hot), pour it into a bowl with the sugar. Whisk really well until the mixture looks lump free.
- Add the liquids: Add the condensed milk, regular milk and vanilla. Whisk again until the batter looks super smooth, luscious and shiny.
- Mix in the dry ingredients: Sift in the all purpose flour, cornflour and baking soda. Gently mix until just combined. The batter should be pourable and smooth, without any dry pockets.
- Prepare the baking dish: Grease your baking dish well, pour in the batter and smooth the top using a spatula.
- Set up the water bath: Place the baking dish inside a larger, oven safe tray or pan. Carefully pour hot water into the larger tray until it comes about halfway up the sides of the brownie dish. This water bath helps the brownie bake gently and evenly, giving you a crispy top with a gooey centre.
- Bake low and slow: Bake in a preheated oven at 160°C for 1 hour. Once baked, take it out of the oven and let it cool for around 10 minutes.
- Optional chocolate topping: While the brownie is still warm, place a slab of dark chocolate on top and let it melt naturally. Spread it gently and allow the brownie to cool slightly.
- Serve: Spoon it out while it’s still warm and soft. I love serving this with vanilla ice cream and a pinch of flaky salt.

I tried the recipe and it turned out just too good. Anyways I love chocolates and anything to do with brownies but this recipe looks good and tastes good too. Worth your time and worth trying!!
