Ingredients
Soup
- 2 tbsp olive oil
- 7 cloves garlic, chopped
- 1 red onion, chopped
- 1 inch ginger, chopped
- 2 green chilli, chopped
- 1 cup chopped cabbage
- 1 carrot, chopped
- 1/4 cup chopped capsicum
- 1/4 cup chopped green beans
- 1/4 cup sweet corn
- salt and pepper to taste
- 2 tbsp soy sauce
- 2 tbsp red chilli sauce
- 1-2 tbsp vinegar
- 2 cups boiling water or vegetable stock
- 1 tbsp cornstarch + 2 tbsp water
Crispy Noodles
- 1 cup boiled whole wheat noodles
- 1 tbsp sesame oil
Garnish
- green onions, chopped
Instructions:
- Heat a pot on medium heat and add olive oil. Once hot, add chopped onion, ginger and garlic and cook until fragrant and lightly golden.
- Add cabbage, carrot, green beans, capsicum, sweet corn and green chillies. Season with salt and black pepper and cook until the vegetables soften.
- Add soy sauce, red chilli sauce and vinegar. Mix well, then pour in 2 cups boiling hot water or vegetable stock.
- Bring the soup to a boil, then lower the heat and let it simmer for 10–15 minutes to develop flavour.
- Mix 1 tablespoon cornstarch with 2 tablespoons water and pour this slurry into the soup. Cook on medium heat, stirring until the soup thickens slightly and looks glossy.
- Turn off the heat and garnish with chopped green onions.
- For the crispy noodles, boil whole wheat noodles until cooked, drain, mix with oil and airfry on parchment at 200°C for 11-13 minutes, flipping midway until crisp. Let cool for 5 minutes, crush and serve on top of the soup.
