Airfryer Double Chocolate Muffins

Ingredients
- 1/4 cup (60 g) curd or yogurt
- 2 tbsp (30 g) milk
- 2 tbsp (27 g) oil
- 1/4 cup (50 g) brown sugar
- 1/2 tsp vanilla extract
- 1/2 cup (60 g) all purpose flour
- 2 tbsp cocoa powder
- 1/4 tsp instant coffee
- 1/2 tsp baking powder
- 1/8 tsp baking soda
- pinch of salt
- 1/4 cup (45 g) chocolate callets or chips

Instructions:
- In a bowl, add brown sugar (you can also use white sugar), oil, milk, yogurt and vanilla extract. Whisk well till the sugar is almost completely dissolved and everything is well incorporated.
- Add the dry ingredients: all purpose flour, cocoa powder, instant coffee powder, baking powder, baking soda and a pinch of salt and whisk into a smooth batter.
- Add chopped chocolate or chocolate chips and gently fold them into the batter.
- Transfer the batter to a parchment lined or liner lined muffin tray, you can also use individual ramekins.

Top with more chocolate chips and bake according to your preference:
Airfryer: Preheat to 200°C and airfry at 190°C for 5 minutes, reduce the temperature to 170°C and airfry for another 12–15 minutes or till a toothpick inserted into the centre comes out with a few moist crumbs.
Oven: Bake at 200°C for 7 minutes, reduce the temperature to 180°C and bake for another 15-20 minutes or until a toothpick inserted into the centre comes out clean. - Top with flaky sea salt and serve them warm or let them cool completely before serving, enjoyy!
